5 Ingredient Beetroot Hummus
Who doesn’t love hummus? We go through tubs of the stuff in my house.
So, when I find the time I love to make my own hummus and give it an antioxidant boost with beautiful, colourful beetroots. Let’s do this!
Ingredients:
- 2 cans of chickpeas, drained and rinsed 
- 4 small (250g) peeled and roasted beetroot 
- Juice and zest of 1 lemon 
- 1/2 cup extra-virgin olive oil 
- 1/2 cup tahini 
- Salt and pepper to taste (optional) 
Method:
- Add chickpeas, beetroot, lemon juice, olive oil and tahini to a food processor and process until smooth 
- Add salt and pepper to taste 
- Eat your hummus and enjoy!
